(Delicious) Apricot-Oatmeal Bar

Crunchy, buttery, gooey reminder of summer all packed into self-defined bite size. For lovers of crusts, the slight tang of apricot, and those who are procrastinating on doing anything but what they’re supposed to, this apricot-oatmeal bar is quick and guiltless until you realize that half of it is gone; but by then, the sugar kick has already set in and back to work reinvigorated it is.

Preheat oven to 350 degrees.

Mix all of the below together in a bowl.

  • 1/2 cup packed light (or dark) brown sugar
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup Quaker oats

Squish around the dry material into the butter, easiest to just use your hands. It feels icky, but it’s super efficient.

  • 1/2 cup butter, softened

Press half of the mixture into the bottom of a greased 8×8 pan. Spread the apricot jam on top of the oats leaving a small margin from the edge (about 1/4 inch). Pour the remaining mixture on top and press lightly into jam. Drizzle maple syrup on top and garnish with chocolate chips.

  • 3/4 cup Trader Joe’s Apricot Spread
  • Maple Syrup
  • Ghirardelli Chocolate chips

Bake for 35 minutes.

Try not to eat the entire pan.

Oops, too late for me.
